Modern Day Fox Vegan Chocolate Chip Walnut Muffins

Nine weeks into my whole food plant based journey, and I’m surviving… and thriving! My workouts are going great. As of today, I’m on day 22 of my 80 day fitness journey. I feel like I’ve turned a new page in my life where I’m not controlled by sugar anymore. It’s the greatest feeling of release. You have no idea how much white sugar controls your life until you remove it from your diet. All of the sudden you just stop thinking about getting your next fix every chance you get. I don’t know about you, but that’s how it was for me. Sugar was like a drug. I feel like a piece of my mind has just been freed up for more positive activity. It’s hard to explain in words, but it is so freeing.

That said, I still like a treat once in a while! I just use different kinds of sweeteners in my cooking now, specifically maple syrup, coconut sugar, or honey. Since I’m not eating animal products anymore, I’ve also had to learn how to bake without eggs. And, just for an added challenge, I’ve cut out oil as much as possible and replaced it with applesauce where applicable.

One would think I’m suffering, but I’m not! I have reviewed tons of vegan baking recipes and experimented until I found the right combination for my taste. Texture was huge for me. So many Vegan recipes use oats for the flour base and I found that everything comes out gummy. I also wasn’t crazy about how so many recipes used banana in place of oil. Whole wheat flours, regular flour, flax, and applesauce made for better alternatives for the flours, oils and eggs.

Before you try this recipe, I want to clarify something. If you are trying vegan baking for the first time, remember you are cooking in a new way. These are going to be slightly different in texture and taste from the muffins you are used to making. Keep an open mind. When you turn to a plant based diet, your taste buds change. You don’t need tons of sugar and oil for something to taste good. I guess what I’m saying is don’t try to compare apples to oranges. These are a healthy alternative to your run-of-the-mill high calorie muffin, and a nice treat for those on a plant-based diet.

Ingredients
  • 1 flax "egg" (To make a flax egg, mix one TBSP flax meal with 2.5 TBSP water.)
  • 1 cup Almond milk + 1 Tbsp lemon juice
  • 1 cup Whole wheat flour
  • 1/2 cup Unbleached all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp Baking Soda
  • 1 tsp Cinnamon
  • 1/2 cup Applesauce
  • 1/2 cup Coconut Sugar brown sugar may be subbed
  • 1 TBSP Maple Syrup
  • 1 tsp Vanilla extract
  • 1/4 tsp Salt
  • 1/3 cup Semisweet chocolate chips non-dairy for vegan
  • 1/3 cup chopped walnuts optional

  • 1 TBSP Maple Syrup
  • 1 tsp Vanilla extract
  • 1/4 tsp Salt
  • 1/3 cup Semisweet chocolate chips non-dairy for vegan
  • 1/3 cup chopped walnuts optional
Instructions
  1. Preheat oven to 350.
  2. Mix up your flax egg and set to the side. (One tablespoon flax meal mixed with 2.5 TBSP water).
  3. Mix almond milk and lemon juice in a separate small bowl and set aside for five minutes to allow to “curdle” like buttermilk.
  4. Sift together all dry ingredients- baking powder, baking soda, salt, cinnamon, whole wheat flour, all-purpose flour. Mixing dry ingredients separately helps to ensure that all they are all evenly distributed throughout the flour.
  5. After almond milk is curdled, mix flax egg, curdled almond milk, applesauce, coconut sugar, maple syrup, and vanilla abstract in a large mixing bowl.
  6. Slowly fold your dry ingredients into your wet ingredients. Mix until throughly combined and smooth.
  7. Fold in chocolate chips and walnuts.
  8. Lightly spray muffin pan.
  9. Evenly distribute batter across 12 muffin molds. These don't rise a whole lot, so fill to the top.
  10. Bake for 25-27 minutes until a toothpick comes out clean.
  11. Allow to cool, and then enjoy!

Modern Day Fox Butternut Squash Breakfast Porridge (Vegan – Grain-free)

Y’all. I ate squash for breakfast. Who am I? What have I become? Enlightened, that’s what.

If you’ve been following me, you know that I have cut grains from my diet and stuck to a Paleo(ish) meal plan for the last few months. I do this on and off throughout the year. The main reason is due to my husband’s struggle with Ulcerative Colitis. When we adapt his nutrition plan, mine follows suite. We are not strict text-book Paleo. We eat cheese and yogurt very frequently. And lots of meat and eggs.

And I can’t take it anymore. Not only am I sick of eating meat, I’m also sick of handling it. I noticed within the last year that it was really starting to gross me out to handle meat, especially chicken. By the time we sat down to eat, I would sometimes lose my appetite.

Recently, my friend started experimenting with Whole Food Plant Based nutrition and really peaked my interest. The recipes she was posting were very intriguing and made eating vegetables look a lot more palatable for this non-loving veggie girl. So, we are doing an experiment here at our house to see how the husband does with cutting back on meat. I prepped a week of vegan dinners using a free meal plan from Clean Food Dirty Girl. We are also incorporating SOME whole grains, and eating legumes and beans. My thinking is that although the simplicity of Paleo has been good for him in that he eats the same things daily, he surely can’t be benefitting from trying to digest (and eliminate) all that meat. It’s probably just sitting in his gut in massive quantities.

So, let’s see how this goes! And, let’s eat squash for breakfast!

Modern Day Fox Butternut Squash Breakfast Porridge (Vegan - Grain-free)
A great alternative to traditional oatmeal if you are cutting grains and seeking ways to get more plant-based meals into your diet. This is filling and healthy, and a great way to start your day!

  • 1 cup Raw Nuts almonds, walnuts, pecans, cashew
  • 2 cups Butternut Squash peeled and cubed
  • 2 Apples peeled, cored and chopped
  • 1 Date soaked, pitted and chopped (optional)
  • 1 tsp Cinnamon ground
  • 2 TBSP Coconut Sugar or maple syrup or brown sugar
  • 1 cup Coconut Milk canned (shake well before opening)
  • 1/4 cup Almond Milk or any non-dairy milk
  • Pinch Salt

Instructions
  1. Soak one cup raw nuts overnight.
  2. Peel, chop and cube two cups butternut squash and two small apples. *TIP* If you microwave your squash before peeling for about 4 minutes, you will save yourself a lot of blisters and curse words!
  3. If you plan to use a date, drop it in hot water for ten minutes while you complete the next steps.
  4. Drain your soaked nuts and rinse them. Add to high powered blended and create a grainy nut flour.
  5. Add squash, apples and nut flour to inner liner pot.
  6. Add one tsp cinnamon.
  7. Add two TBSP coconut sugar. Maple syrup works as a sub or brown sugar if you aren’t concerned about highly processed sugar.
  8. Drain, pit and chop the date and add it to the pot. Raisins work too!
  9. Add one cup canned coconut milk (shake can well before opening).
  10. Add 1/4 cup almond milk.
  11. Add a pinch of salt.
  12. Stir well and put pot into IP.
  13. Replace lid and set valve to sealing.
  14. Set pot for 20 min high pressure and use a quick release.
  15. Remove lid and stir, breaking up chunks of squash and apples until the consistency is more like oatmeal.
  16. Serve in a bowl and add desired topping like coconut, raisins or nuts.

Easy Air Fryer Glazed Donuts

I am loving my new Power Air Fryer XL. I have been researching these fryers for months and finally broke down and got one after receiving an unexpected gift card. My husband loves french fries so he was all-in for this purchase.

Now that I wrapped up my first round of Shift Shop, I was able to loosen the reigns on my nutrition for a couple days and have some “cheat” foods. I feel a lot better about myself when I DECIDE to have a treat rather than waiting until I am so desperate that I eat a pint of Ben and Jerry’s. Making a decision about what you will and will not eat is being in control of your health, and that’s a great feeling!

I saw this idea for Air Fryer donuts first on This Old Gal here. I also found it on several other sites after that, but I want to give complete credit to Jill at TOG for turning me onto this! She has several more donut flavors on her page, so please go check out the post! If you are the type of person that only makes food from scratch, check out this recipe from the Power Air Fryer XL site.  And here is one more recipe using the canned biscuits. Those directions required way more glaze than I felt necessary, but if you love some glaze then use those measurements! You can also be like my family and dump caramel syrup on them as an additional splurge. (Oh, it was as good as it looks!)

The reason this activity was perfect for my kids was that the recipe is so simple, and the cook time is so short. When cooking with kids, you will find that they hate waiting! This type of recipe offers instant gratification. By the time you are done making the glaze and sugar coating, the donuts are done!

Easy Air Fryer Glazed Donuts
This is such a fun activity to do with your kids! This recipe was inspired by several that I found online, but especially by Jill at This Old Gal. My cooking times differed from hers, so I decided to offer my own instructions.

Ingredients
  • 1 can Grand's Butter Biscuit (I used Grand's Flaky Layers)
  • 1 teaspoon oil (I used coconut oil)
  • 3 TBSP Powdered Sugar
  • 1 teaspoon Pure Vanilla Extract
  • 2 TBSP Sugar (optional for cinnamon sugar coating)
  • 1 teaspoon Cinnamon (optional for cinnamon sugar coating)
  • 2 teaspoons Milk or Almond milk (add more if needed to create a thick paste)
Prep Time 5 min
Cook Time 10 min

Instructions
  1. Open biscuits and lay out on clean service.
  2. Use a biscuit cutter or any small round cup to cut out the middle of the biscuit. I used a plastic medicine cup. I pressed it in and twisted it back and forth until it cut through. You will likely need to help your kids with this.
  3. Lightly grease your fryer basket. I used a little bit of coconut oil on a paper towel and let my son rub it all over the basket. This helps prevent sticking.
  4. Set the donut holes aside. Place half of the biscuits into the fryer basket. Set air fryer to 350 for five minutes. (I use a Power Airfryer XL. Your fryer may take more or less time.)
  5. While donuts are baking, combine powdered sugar with two teaspoons of milk and the vanilla.
  6. When timer goes off, immediately remove donuts and put on a plate to cool. Add the second batch of biscuits to the fryer, and follow the same directions as above.
  7. While your second batch is cooking, drizzle glaze onto the donut. If you are using the cinnamon sugar, you dip your donut into it to coat. If you want to skip the glaze and only use cinnamon sugar, just lightly brush a little coconut oil onto the donut and then dip into the sugar mix.
  8. When the donuts are finished, fry your donut holes using a setting of 350 for 3 minutes.
  9. When donut holes are finished, glaze them and then drop them into a baggie of the cinnamon sugar mix and let your kids shake them until they are completely covered.
  10. ENJOY!

21 Day Fix Approved Instant Pot Good Morning Quinoa

This girl is back on the Fix wagon. I finished up Hammer and Chisel a few days early so that I could join my rock star challengers with a new round on May 1st. Since I have a few newbies in the group, I decided to go to battle with them and do the 21 Day Fix again on Beachbody on Demand. I’m excited. I know this program gives me results and that is what I’m looking for! So many exciting things coming up this summer and I want to be in tip-top shape. My group truly inspires me to be better and to do better.

To celebrate my first week of the Fix, I am putting up a super easy breakfast recipe that you can make in your Instant Pot. Don’t have an Instant Pot? No problem. Make it on your stovetop. Then, go to Amazon and order your Pot! (I’m sorry, but I just love that thing.)

This recipe is a sweet twist on quinoa while still being clean and healthy. When served with berries and nuts, it makes for a hearty breakfast. Eat it up, then go get your workout done! Enjoy!

21 Day Fix Approved Instant Pot Good Morning Quinoa

  • 1 cups dry quinoa rinse well before cooking
  • 2 cups Water
  • 2 TBSP Maple Syrup or Honey
  • 1/2 tsp Pure Vanilla Extract
  • 1/8 tsp Nutmeg
  • 1/2 tsp Cinnamon
  • Dash Salt
  • 3 cups Strawberries or Blueberries Use 1/2 cup per serving
  • 3/4 cups Pecan Halves (roughly 10 pecan halves per serving)
Servings
Ingredients
  • 1 cups dry quinoa rinse well before cooking

  • 1/2 tsp Pure Vanilla Extract

Sharon’s Dang Good Oats [Instant Pot]

You probably already know that I love my neighbor, Sharon, since I feature her on here frequently. She loves to cook just like I do and we have a blast texting each other recipes and swapping samples. Good neighbors make life so much more fun.

Sharon texted me the other night very excited about a steel cut oats recipe she saw on The Chew. Sharon never leaves a recipe the way she found it, and neither do I. So, I took Sharon’s recipe that she had adapted from The Chew, and I made my own changes based on the ingredients I had. Of course I also had to adapt it for the Instant Pot too!

What resulted was a breakfast dish that not only tasted good, but has incredible nutritional value. As Sharon said, “If I can get high fiber, anti-inflammatory antioxidants, and a proper glycemic index all in one bowl, I’m good!” Not to mention that steel cuts oats are very filling and help keep your bowels moving.

  • 1 tsp Pure Vanilla Extract
  • 1 tsp Cinnamon
Course Breakfast
Prep Time 5 min
Cook Time 25 min including time to pressure and release

  • 1 TBSP Tahini Butter
  • 1 TBSP Butter

  1. Set Instant Pot to Saute. Melt tahini and butter. Add oats and toast for 2 minutes, stirring continuously. Add in remaining ingredients and stir well.
  2. Turn off Pot and reset on Manual HP for 3 minutes. Allow pressure to release naturally. Stir and add additional sweetener to taste. Serve hot and enjoy!

This recipe was adapted from one seen on The Chew.

1 cup of dry steel cut oats should only be considered 2 servings, but this is an extremely filling recipe. I could have easily fed my family of 4 and still had leftovers.
