Modern Day Fox Air Fryer Veggie Fritters
frozen vegetable blend
I used Normandy Blend
TBSP coconut flour
Salt and Pepper
season to taste
Steam veggies. (I used the Instant Pot Steam setting on HP 2 minutes.)
Finely mash vegetables in a medium sized bowl. Allow vegetables to cool.
Whisk eggs and stir into vegetables.
Stir in coconut flour.
Stir in parmesan cheese.
Add salt, pepper and garlic powder to taste.
Use olive oil to coat air fryer basket. I use an oil mister.
Using hands, scoop up 1/4 of mixture and form a patty.
Arrange the patties into air fryer basket without overlapping.
Set air fryer at 390 for 15 minutes. Gently flip with a spatula halfway through cooking time.
Serve and enjoy!
