Modern Day Fox Butternut Squash Breakfast Porridge (Vegan – Grain-free)

Y’all. I ate squash for breakfast. Who am I? What have I become? Enlightened, that’s what.

If you’ve been following me, you know that I have cut grains from my diet and stuck to a Paleo(ish) meal plan for the last few months. I do this on and off throughout the year. The main reason is due to my husband’s struggle with Ulcerative Colitis. When we adapt his nutrition plan, mine follows suite. We are not strict text-book Paleo. We eat cheese and yogurt very frequently. And lots of meat and eggs.

And I can’t take it anymore. Not only am I sick of eating meat, I’m also sick of handling it. I noticed within the last year that it was really starting to gross me out to handle meat, especially chicken. By the time we sat down to eat, I would sometimes lose my appetite.

Recently, my friend started experimenting with Whole Food Plant Based nutrition and really peaked my interest. The recipes she was posting were very intriguing and made eating vegetables look a lot more palatable for this non-loving veggie girl. So, we are doing an experiment here at our house to see how the husband does with cutting back on meat. I prepped a week of vegan dinners using a free meal plan from Clean Food Dirty Girl. We are also incorporating SOME whole grains, and eating legumes and beans. My thinking is that although the simplicity of Paleo has been good for him in that he eats the same things daily, he surely can’t be benefitting from trying to digest (and eliminate) all that meat. It’s probably just sitting in his gut in massive quantities.

So, let’s see how this goes! And, let’s eat squash for breakfast!

Modern Day Fox Butternut Squash Breakfast Porridge (Vegan - Grain-free)
A great alternative to traditional oatmeal if you are cutting grains and seeking ways to get more plant-based meals into your diet. This is filling and healthy, and a great way to start your day!

  • 1 cup Raw Nuts almonds, walnuts, pecans, cashew
  • 2 cups Butternut Squash peeled and cubed
  • 2 Apples peeled, cored and chopped
  • 1 Date soaked, pitted and chopped (optional)
  • 1 tsp Cinnamon ground
  • 2 TBSP Coconut Sugar or maple syrup or brown sugar
  • 1 cup Coconut Milk canned (shake well before opening)
  • 1/4 cup Almond Milk or any non-dairy milk
  • Pinch Salt

Instructions
  1. Soak one cup raw nuts overnight.
  2. Peel, chop and cube two cups butternut squash and two small apples. *TIP* If you microwave your squash before peeling for about 4 minutes, you will save yourself a lot of blisters and curse words!
  3. If you plan to use a date, drop it in hot water for ten minutes while you complete the next steps.
  4. Drain your soaked nuts and rinse them. Add to high powered blended and create a grainy nut flour.
  5. Add squash, apples and nut flour to inner liner pot.
  6. Add one tsp cinnamon.
  7. Add two TBSP coconut sugar. Maple syrup works as a sub or brown sugar if you aren’t concerned about highly processed sugar.
  8. Drain, pit and chop the date and add it to the pot. Raisins work too!
  9. Add one cup canned coconut milk (shake can well before opening).
  10. Add 1/4 cup almond milk.
  11. Add a pinch of salt.
  12. Stir well and put pot into IP.
  13. Replace lid and set valve to sealing.
  14. Set pot for 20 min high pressure and use a quick release.
  15. Remove lid and stir, breaking up chunks of squash and apples until the consistency is more like oatmeal.
  16. Serve in a bowl and add desired topping like coconut, raisins or nuts.

Vegetables. I’m trying to eat them. Trying hard. And, I’m going to take you on the journey with me.

I already knew that I could successfully cook a beet. I did it in my Instant Pot and actually enjoyed it. If you didn’t see that recipe, check it out here. My neighbor, Sharon, gave me a butternut squash that had been sitting in my window seal begging to be eaten. I had apples in the fridge. I also happened to have a fennel. Why? I don’t know. I just bought one without really knowing what I would do with it. I figured if I tossed all those things with maple syrup and a little oil, then I would have something pretty special. I was right!

My kids wouldn’t touch this dish with a ten foot pole (shocking), but my husband and I thoroughly enjoyed it with savory pork chops and a kale salad. The next day I had them for lunch over sautéed zucchini. They taste good hot or cold!

This dish tastes great, and it looks gorgeous on the table with the rich, beautiful holiday colors. If you are looking for a healthy dish to serve at your next dinner party, this would be a show-stopper. Enjoy!

  • 2 bulbs Fennel sliced (remove ends and outer leaves)
  • 3 Red Beets peeled and cubed
  • 2 TBSP olive oil or avocado oil
  • 2 TBSP Maple Syrup
  • 1/2 tsp sea salt plus a dash
  • 1/4 tsp pepper plus a dash
  • 2 TBSP Pecan Pieces optional
Course Side Dish
Prep Time 15 minutes
Cook Time 1 hour

Instructions
  1. Preheat over to 400 degrees.
  2. Peel and cube squash. You may want to microwave the whole squash for 3 minutes before peeling. It makes it so much easier!
  3. Peel, core, and cube apple.
  4. Remove outer leaves and trim ends off fennel. Cut in half length wise, and then slice. Soak in water for a few minutes to remove any dirt. Drain.
  5. Peel and cube beets.
  6. Add squash, apple and fennel to large roasting pot. Toss in 1.5 TBSP olive oil, 1.5 TBSP maple syrup, salt and pepper.
  7. In a separate bowl, toss the beets with another 1/2 TBSP olive oil and 1/2 TSP maple syrup and a dash of salt and pepper.
  8. Carefully add them to the roasting dish by placing them on top of the other veggies. You don’t want to stir them in as the color will bleed. That’s going to happen anyway, but this helps cut back a little on the color bleed.
  9. Sprinkle pecans over mixture.
  10. Roast in oven for one hour.
  11. Carefully stir halfway through.
  12. Serve, and enjoy! These are also delicious served cold over arugula.

Modern Day Fox Instant Pot Thai Soup

My best friend, Chad, was dealt an unexpected blow this year. Out of the blue, he was diagnosed with Stage 4 Neuroendocrine Cancer and Type 2 Diabetes. To say we were shocked by this news is the understatement of the year! Chad and I have been singing partners for over 12 years, and he is like a brother to me.

Chad is handling this turn of events like a champion. It SUCKS, and there is no question about that. But, Chad has dedicated himself to trying to inspire others not to give up the fight. Touching others keeps his fight alive! As part of being a service to others, Chad asked if he could join me in some of my cooking videos to make some diabetic friendly recipes. He is hoping he can help inspire others to heal themselves with healthy eating as he does the same for himself.

Modern Day Fox Instant Pot Thai Soup
A diabetic-friendly and Paleo hearty soup! The peanut butter gives this soup a rich, creamy flavor.

  • 1 TBSP Sesame Oil
  • 1 lb Ground Turkey or Ground Chicken
  • 1 TBSP minced garlic
  • 2 cups Cabbage sliced
  • 1 Red Bell Pepper julienned
  • 6 oz Mushrooms sliced
  • 1 Box Chicken broth (4 cups)
  • 2 cups Water
  • 1/4 cup Coconut Aminos or low sodium soy sauce
  • 2 TBSP Rice Vinegar
  • 1/4 cup Natural Peanut Butter
  • Dash Salt season to taste
  • Dash pepper season to taste

  5. Set pot to 15 min HP. When timer goes off, use a quick release. (Natural release is also fine.)
  6. Serve, and enjoy!

Modern Day Fox Instant Pot Maple Spiced Sweet Potatoes

In my fitness groups, we have been talking about what a critical time of year this is to stay dedicated to our health and fitness goals. This is when most people throw in the towel and start talking about “Jan 1st” as the magical date to make big changes. I say, why not right now? Just because you make good decisions for your health during the holidays doesn’t mean that you can’t indulge a little too! How about making sure you get in that 30 minutes of exercise each day as a non-negotiable? How about making a plan of action for how you will approach holidays meal. Will you fill your dinner plate with meat and vegetables and skip the bread basket, but indulge on a piece of pecan pie? Or would you rather fill up on rich mashed potatoes and gravy and let the kids enjoy the chocolate brownies? Or, are you going to eat all the food, but make sure that you are back on track the very next day? Make a conscious decision about how you are going to approach these things, and you are bound to feel less guilt-ridden anxiety and make better decisions for yourself.

All that said, why not be the person who brings a dish to the holiday table that doesn’t use refined sugar and a 1/2 lb of butter? If you are looking for ideas, I have a great one for you! Try this super-simple Maple Spiced Sweet Potato dish that you can throw together in roughly 15 minutes in your Instant Pot! Not everything has to be baked with brown sugar and butter to taste amazing. You might be surprised to find that some real maple syrup and unrefined coconut oil adds flavor while also letting you actually taste the natural flavor of the sweet potato. Of course you can sugar up this recipe as much you would like, but this version skips the guilt while serving up all the goodness! Your body will thank you!

  • 5-6 medium sweet potatoes
  • 1/4 cup Water
  • 1/4 cup Coconut Oil melted
  • 1/4 cup Maple Syrup
  • 1/4 tsp All-spice or cinnamon and nutmeg
  • 1 TBSP honey (optional for drizzling)
  • 1/4 cup Pecans chopped (optional for garnish)
Course Side Dish
Prep Time 5 min
Cook Time 8 min

  5. Place lid on Instant Pot and turn valve to Sealing.
  6. Set pot to 8 minutes, manual high pressure. If you prefer a firmer potato, you may opt to cook for 6 or 7 minutes instead. Use a quick release when timer goes off.
  7. Stir potatoes carefully as not to break them apart too much.
  8. Pour into serving dish.
  9. Drizzle with additional maple syrup or honey, if desired.
  10. Garnish with chopped pecans, if desired.
  11. Enjoy!

Modern Day Fox Instant Pot Paleo Cranberry Sauce

I’m on a mission to use as my Instant Pot as much as possible in preparing for holiday meals. I have two, after all, and they are just plain fun. I’m also on a mission not to use ANY white sugar or grains in the dishes I prepare for the family. I don’t expect everyone to eat healthy, but I’m going to do my part to offer more nutritious options. And, before you say it, yes, I do know that honey and maple syrup still have a high natural sugar and carb content. This should be considered a Paleo treat. We gotta live a little, right?

Before you tackle making your own cranberry sauce, I need to remind you of something. Cranberries are tart. Like, really, really tart. When you open a can of cranberry sauce and throw it on your Thanksgiving table, it is going to be loaded with refined sugar and have a different flavor than a homemade version. A homemade version like mine uses natural sweeteners like maple syrup and honey, and the natural flavor of the cranberry is a bit more prevalent. I want to remind you of that so you don’t taste it and then freak out on me. When you stop using white sugar in your cooking, it’s crazy how different food starts to taste. It seems like there is so much sugar in everything that it’s all we end up wanting to taste. After cutting it out for the last couple months, I’m finding my taste buds are changing and I’m enjoying the actual taste of the food I’m preparing.

If you do find the tartness to be too over-the-top, I included ways to tone it down. An additional tablespoon of honey or maple syrup, or some additional orange juice can really help. I will say that I made this for my son’s Thanksgiving program and I left with an empty bowl. So, that’s a good sign!

Modern Day Fox Instant Pot Paleo Cranberry Sauce
This is a tangy and delicious Paleo-friendly Cranberry Sauce to serve at your next holiday feast, or anytime of year! Makes about 6 servings 1/4 cup each. Double it for a crowd!
Course Side Dish

  • 8 oz Cranberries fresh
  • 1 Honeycrisp Apple
  • 1 Orange for zest and juice
  • 1/4 cup Maple Syrup plus 1 TBSP (optional)
  • 1/4 cup Honey
  • Dash Salt
  • 1/4 tsp All-spice Cinnamon can be subbed.
Course Side Dish

  • 8 oz Cranberries fresh
  • 1 Honeycrisp Apple
  • 1 Orange for zest and juice
  • 1/4 cup Maple Syrup plus 1 TBSP (optional)
  • 1/4 cup Honey
  • Dash Salt
  • 1/4 tsp All-spice Cinnamon can be subbed.
Instructions
  1. Wash cranberries and pour into Instant Pot liner pot.
  2. Add diced Honeycrisp apple.
  3. Add maple syrup.
  4. Zest orange peel, roughly 1-2 tsp of zest.
  5. Squeeze juice from orange over cranberries and apples.
  6. Stir well.
  7. Place lid on Instant Pot and turn vent to Sealing. Set pot to 2 min high pressure, and allow pressure to release for 5 minutes before releasing the remaining pressure.
  8. Stir to break up cranberries and fruit a bit.
  9. Transfer into blender.
  10. Add honey, dash of salt, and All-Spice seasoning.
  11. Pulse to blend to desired texture.
  12. Taste to determine if additional sweetner is needed to tone down tartness. Add one tablespoon of maple syrup and pulse. You can also tone down tartness by adding additional orange juice or honey.
  13. Serve along side a savory cut of meat, and enjoy!

Quick and Easy Instant Pot Italian Meal Prep {Grain-free}

Meal prep can be overwhelming, but it doesn’t have to be! Instant Pot to the rescue!

I’ve been experimenting with cooking spaghetti squash in the Instant Pot. It is admittedly a bit of a different texture than when baked in the oven as it is cooked with moisture in the Instant Pot rather than dry heat. But, it gets done SO much faster and I like that. I love how spaghetti squash is so porous and takes on flavors so easily. I recently had a meal from my favorite meal service, Paleo Works, that combined spaghetti squash, chicken and tomato bruschetta. I decided to try to do a quick copycat recipe using my Instant Pot. While mine is admittedly a hack in comparison to that chef’s creation, I think I threw together a tasty meal. You can certainly make your own homemade bruschetta, but I use a jarred grocery store kind in this recipe in order to save time.

I also have been exploring warm potato salads. Have you ever had a Hot German Potato Salad where the potatoes are slightly over cooked and starting to fall apart? The potatoes begin to fall apart as you stir in the dressing and it creates a thick sauce. It is so good! It occurred to me that I could create an Italian version of Hot Potato Salad using jarred basil pesto and red potatoes. I also threw in some green beans for a veggie kick, and chicken for added protein. Best of all, I could cook it all in the Instant Pot at once!

I made four of each of these meals for a total of EIGHT meals all at the same time in roughly 45 minutes. While the squash was cooking, I prepped the chicken, green beans, and potatoes. When the squash finished, I removed it and washed my pot. I then added the chicken, potatoes and green beans to the pot to cook on high pressure for 8 minutes. I scraped out the spaghetti squash and mixed in some tomato bruschetta. I portioned it out in four containers. When the pot timer went off, I released the steam and removed half of the chicken and evenly distributed over each of the servings of squash. I added a heaping spoonful of bruschetta on top of the chicken, and BAM! Four meals were done.  Next I scooped out the potato mixture and put it in a bowl. I thinned out some jarred basil pesto with olive oil and then gently tossed the potato mixture with the pesto until it was coated evenly. I divided it into four servings, and BAM! Four more meals done!

A couple notes: I tried the hot potato salad using frozen chicken. I cooked it for 13 minutes. It was good, but the potatoes were extremely soft. I think if you are using frozen chicken, then you should cook the potatoes and green beans separately for 8 minutes. Cook the frozen chicken for 13 minutes. Then, combine. Also, if you don’t like basil pesto, just use melted butter instead. I also made this with cilantro pesto and it was delicious!

  • 1 cup Chicken broth
  • Salt and Pepper Season as desired
  • 1 TBSP Italian seasoning
  • 12 oz Tomato Bruschetta jar
  • 2 TBSP Basil Pesto jar
  • 1 TBSP olive oil
  • Shredded Parmesan Cheese, Walnuts or Pine Nuts For garnish, if desired.

  • Shredded Parmesan Cheese, Walnuts or Pine Nuts For garnish, if desired.
Instructions
  1. Slice spaghetti squash in half, lengthwise. Spoon out seeds and strings. Place halves in steamer basket and into liner pot. Add one cup water.
  2. Set pot to manual high pressure for 4 minutes and allow 5 min natural release. If you like firmer strands of spaghetti squash, you may opt to do 3 minutes instead.
  3. While squash is cooking, cube red potatoes. Trim ends from fresh green beans and cut into thirds. Cube raw chicken and season with salt, pepper and Italian seasoning. You may choose to add additional seasonings of your choice. I typically add a garlic seasoning from Sprouts that I like.
  4. When Instant Pot timer goes off and steam has released for five minutes, turn the valve to release remaining steam. Use an oven mit to remove squash from pot. Allow to cool.
  5. Wash your liner pot.
  6. Add potatoes, green beans and chicken (in that order) into pot. Add one cup broth.
  7. Replace lid on pot, turn valve to sealing, and reset to 8 minutes high pressure.
  8. While the chicken and potatoes are cooking, use a fork to scrape spaghetti squash out of its skin. Transfer strands to a large bowl.
  9. Stir in 6 oz (half the jar) of Tomato Bruschetta. Portion out squash into four meal prep containers.
  10. When timer goes off in Instant Pot, use a quick release for the steam.
  11. Use a large spoon to scoop out half of the chicken chunks and evenly portion in each container on top of the squash.
  12. Spoon remaining Tomato Bruschetta evenly across all four containers over the chicken chunks.
  13. Garnish with shredded parmesan cheese, if desired.
  14. Carefully use a slotted spoon to scoop the remaining chicken, potatoes, and green beans out of the pot. Potatoes will be very soft so handle with care. Discard broth that remains in the pot.
  15. Combine pesto and olive oil in a small bowl to thin it out a bit.
  16. Spread pesto over chicken and potato mixture, and carefully toss to coat evenly.
  17. Distribute to four meal prep containers.
  18. Garnish with shredded parmesan cheese and walnuts or pine nuts, if desired.
  19. Enjoy!

Modern Day Fox Instant Pot Curried Carrot Soup

“Carrot soup? That sounds… um, not good.”

That’s what I said when my best friend, Kelley, suggested we throw together an Instant Pot soup for my blog. But, the more I thought about it, the more I liked the idea of disguising a serving of vegetables into a smooth soup. Make it tasty enough and no one in my family would know they were eating a full serving of veggies. Heck, I hardly noticed myself!

Both Kelley and I deal with food intolerances in our households, so we immediately knew we would make it gluten and dairy-free. We strive to create dishes that are easy, and that meet the needs of our loved ones too. Our end result was a rich, almost buttery-tasting soup that was a cinch to throw together. Even my six year old wolfed down a bowl, and that says something – trust me!

Modern Day Fox Instant Pot Curried Carrot Soup
A rich and velvety carrot-based soup. Paleo friendly, gluten and dairy-free!

Ingredients
  • 17 whole cashews soaked in 1/2 cup water for at least 30 minutes
  • 8-10 whole carrots washed and peeled, remove ends
  • 1 1/2 cups chicken or vegetable broth
  • 1 can Coconut Milk full-fat or lite
  • 1 TBSP curry
  • 1 TBSP minced garlic or, 3 smashed cloves
  • 1/2 cup diced onion or, 2 TBSP dried chopped onions
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • Cashews for garnish (optional)
  • Cilantro for garnish (optional)

Ingredients

Instructions
  1. Soak cashews in 1/2 cup water for at least 30 minutes.
  2. Chop carrots in half.
  3. Drain water from cashews after soaking.
  4. Place all ingredients into Instant Pot and stir.
  5. Set pot to 15 minutes Manual High Pressure.
  6. Use a quick release to release pressure when timer goes off.
  7. Allow to cool for a few minutes, and then transfer ingredients into blender.
  8. Puree until smooth.
  9. Pour into serving bowls. Garnish with chopped cashews and cilantro, if desired.
  10. Enjoy!

Modern Day Fox Grain-Free Chocolate Mini-Cakes

I’m on my fourth week of removing grains from my diet and on cue (usually lined up with a certain time of the month, if you know what I mean), I’ve started craving dessert. I saw where you could cook cakes in the air fryer, so I just had to give it a shot.

I kind of threw this recipe together as a hail Mary after looking at some similar recipes I have made in the past and not having all the ingredients needed on hand. I have to say that I came up with a combo that hit the spot!

These would be fantastic with a Paleo frosting, but I sprinkled on chocolate chips instead. Full disclosure – these are regular chocolate chips. I typically use EnjoyLife chips, but I was all out today. I tolerate dairy just fine, but I wanted to be honest about my photos since my chips are not Paleo. EnjoyLife Chips are non-dairy and cook just like regular chocolate chips. They are amazing!

I hope this turns out well for you. Before you ask, I have not baked this recipe in the oven yet, so I can’t say what the cooking time would be. My advice would be to set your oven at 350, cook it for 15 minutes and then check every few minutes after to see when it is done. One other note – all air fryers vary in cooking time. Keep in mind that I used a Power XL Air Fryer and this timing worked out for me. You may want to check your cakes at the 10, 12, and 15 minute mark to make sure they do not overcook. Good luck!

  • 1/4 cup coconut flour
  • 1/4 cups Tapioca Flour
  • 2 TBSP Cocoa Powder
  • 1/2 tsp baking powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp sea salt
  • 2 eggs whisked
  • 1 TBSP Coconut Oil plus some to grease ramekins
  • 1/3 cup Canned Pumpkin Puree NOT pumpkin pie filling
  • 2 TBSP Maple Syrup
  • 1 TBSP Non- Dairy Chocolate Chips Enjoy Life are awesome! You can use regular chips if you can tolerate dairy.

Cook Time 17 min

  2. In a separate small bowl or glass measuring cup, whisk eggs together.
  3. Add to the eggs all of the remaining wet ingredients and stir until completely smooth.
  4. Stir wet ingredients into dry ingredients until well blended.
  5. Grease ramekins with coconut oil. Pour batter into ramekins in equal parts and sprinkle each with chocolate chips.
  6. Cover each ramekin with foil and use a knife to cut several small slits on top of the foil. Place ramekins into fryer basket.
  7. Set Air Fryer to 390 degrees F for 16 minutes. (Your air fryer cooking time may vary. I'm using a Power XL Air Fryer 5.3 quart.)
  8. Remove foil and allow to cool.
  9. Enjoy!

Perfect Paleo Fried Chicken Thighs (Air Fryer)

I’m off the grains again. This time it wasn’t by choice. The new fitness program that I’m doing cuts out all grains on the third week. As I’m writing this, I’m on Day 20 and tomorrow is the last day. My results are pretty stunning. The best side effect is that this meal plan has been terrific for my husband’s struggle with Ulerative Colitis. When I told him that tomorrow is the last day of the program, he was practically begging me not to go back to cooking with grains again.

But. There is always a “but.”

Cutting grains ain’t easy, honey! I needed something that felt like a “cheat.” Since I just got a brand spankin’ new Power XL Air Fryer, I was anxious to “fry” something. I happened to have quite a lot of Tapioca Starch from when I was doing the Paleo(ish) diet earlier this year. So, I thought I would give it a shot as a breading for fried chicken thighs. The results were off the hook! In 20 minutes, I had perfectly fried and crispy chicken thighs.

A couple things…

I have kind of given up on dragging out my pro camera for my food blog posts. I know that sounds lazy, but my life is nuts and I don’t have time to edit a ton of photos. To be honest, I don’t even really have time to take good photos on my phone. Until I find more time, I am giving the world my crap-tastic iPhone photos. I have been finding myself ditching blog posts because of the anxiety associated with editing all the food pics. Therefore, I’m choosing posting more often over pretty photos!

Secondly, when I cook, I tend to do pinches of this and that instead of measuring everything out exactly. Feel free to leave your measuring spoons in the drawer and grab a pinch or two of these spices. Do what’s easy for you! You can also add seasonings that you personally love to the mixture. Don’t love turmeric, but love Old Bay? Do what floats your boat.

Perfect Paleo Chicken Thighs (Air Fryer)
Crispy, fried chicken thighs that grain-free and delicious!

Ingredients
  • 3/4 cup Tapioca Starch
  • 1/2 teaspoon Salt plus a dusting for chicken
  • 1/4 teaspoon pepper plus a dusting for chicken
  • 1/4 teaspoon tumeric (optional)
  • 1/4 teaspoon garlic salt
  • 1/2 teaspoon paprika
  • 2 lbs Chicken Thighs (boneless) (approximately 6 thighs)
  • 2 teaspoons olive oil (or cooking oil of your choice) Use an oil mister (important)
Prep Time 10
Cook Time 20

Instructions
  1. Combine Tapioca Starch and all seasoning in a bowl and whisk well.
  2. Season chicken with salt and pepper.
  3. Add each chicken thigh individually in the flour mixture until completed covered.
  4. Rub a small amount of oil on the bottom of your fryer basket to help prevent sticking. Place all chicken thighs into fryer basket in one layer. Mist the tops of the chicken thigh with olive oil using the oil mister. Push in fryer drawer.
  5. Push fryer power button and press M and move to Chicken setting. It should go to 400. Set timer to 20 minutes. Flip the chicken every five minutes. Each time after you flip, dust with the leftover flour mixture. The first time you flip, mist with oil. You do not need to add any additional oil after this, but do add the dusting of flour (as shown here).
  6. When the timer goes off, check the temperature of your thighs and make sure it is 160 degrees.
  7. Serve hot and enjoy!

Waldorf Brussels Salad

I just wrapped up week one of the 21 Day Fix on Beachbody on Demand. I’ve done that program quite a few times and I love that I can fall back on it whenever I need fast results. I especially love that the workouts incorporate ab exercises into some of the rounds. Many of the Beachbody programs require you to do a second shorter ab workout in addition to the main workout for that day. I’m just gonna be honest and say that doesn’t happen with this girl. I typically only have 30 minutes to squeeze in the workout and that’s all I’m going to do. Every 21 Day Fix workout is thirty minutes and that fits the bill for me perfectly.

When I’m on the Fix eating plan, I try to keep the green containers (vegetables) interesting so I don’t skip over them. Since it is getting warmer outside, I’ve been craving raw salads so I threw together this light and fresh Waldorf Brussels Salad. I used the shredded brussels sprouts so that you can now conveniently find in the produce section. If  you can’t locate these, you can simply throw the Brussels Sprouts into your food processor to shred them.

  • 6 oz shredded Brussels Sprouts
  • 1 cored and chopped apple
  • 1/3 cup diced celery
  • 1/4 cup dried cherries or cranberries plus 1 TBSP reserved for garnish
  • 1/4 cup chopped walnuts plus 1 TBSP reserved for garnish
  • Dressing:
  • 2 TBSP Avocado oil
  • 2 TBSP Apple cider vinegar
  • 2 TBSP Honey
  • 1/2 tsp sea salt
  • 1/4 tsp pepper
Prep Time 5
Cook Time 5
Passive Time 1 hr Chill in fridge

Ingredients
